Kiwi Fruit Chutney

As usual I’ve been perusing the net looking for a good low calorie recipe. This time for using up my super cheap kiwi fruit. As my belly is very sensitive to acidic food I need to take the sting out of them so I’m trying out a chutney.
Lots of recipes out there but none quite match my fridge and cupboard stock so here is what I’ve gone with.

  • 5 Kiwi Fruit diced small
  • 1 Banana diced
  • Juice of 1.5 Lemons
  • Zest of 1.5 Lemons
  • 1.5 Onions diced small
  • ½ cup of Radishes diced small
  • ½ cup of Sultanas
  • ¼ cup of Brown Sugar
  • ¼ cup Agave Syrup
  • ½ cup of Apple Cider Vinegar
  • 1 tsp Salt
  • ½ tsp Ground Ginger
  • ⅛ tsp Paprika

Add all ingredients to a saucepan and simmer quickly for about 1 hour, stirring regularly.

You are looking for the moisture to cook off, the ingredients to turn glossy and translucent. Keep going till its very gloopy and thick, you will need to stirr it more towards the end. You don’t want this runny.

Remove from heat to cool a little.

Warm your glass jar – don’t put jams or Chutney’s into cold jars when they are warm.

Pour the warm Chutney into the sterile jar and seal so no air can get to it.

Enjoy delicious Chutney! This tastes great!

This made me one 500g Jar.
