Banana Bread 

After another great raid on the discount vegetable bin in Tesco I came across a neglected bunch of bananas. One of them was foul and rotten but the rest of the bag looked fine, if a bit bruised. There were 4 other big yellow fruit inside and at 20p the lot I said, yes please I’ll have those!

Banana bread is a favourite of mine and the opportunity to bake and make a low calorie treat made me super happy. And even better I had all the other things I needed in the cupboard.

So look out folks, here comes my spin on banana bread!

Ingredients 

  • 3 Large Ripe battered Bananas 
  • 1 Medium Egg
  • 75g Flora Light 
  • 135g Demerera Sugar 
  • 185g Plain Flour
  • 1 tsp Vanilla Extract
  • 1 tsp Bicarbonate of Soda
  • Pinch O salt


Method

Pre heat your oven to 170 degrees.

Grab a bread tin, or discover you don’t have one for some reason and line your pie dish with baking paper. Sigh.

Smash up the bananas till they are yucky and smooth-ish.

Beat the egg and mix in.

Mix in all the other ingredients.

Get your dish and pour the sloppy stuff in there.

Bung in the middle of the oven.

Check after 40 minutes. My oven is fan assisted and was cooking it too hard, so I turned it down to 150.

Remove when golden brown and a skewer comes out clean.

Enjoy delicious bread!

This made me 16 pieces at 115 calories each.

    1. Flora light is a spread, its low in calories and made from various oils and buttermilk. Flora make a bunch of different spreads and cooking products, some designed for baking. I usually just use Flora Light as it’s always in the fridge!
